What is it about summer
dinner? So many vegetables at our fingertips, thanks to all our hard working farmers! The first dish, you might remember it,it is a vegetable gratin, I make it often, as it is soooo easy , chalk full of vitamins, and you get to chose what you want to put together ! Slice the vegetables any way you prefer, layering with a few different veggies. Then salt, pepper, fresh garlic, lots of fresh basil and parmsean cheese, drizzle olive oil all over, then do another layer the same exact way, topped with chopped or sliced tomatoes, again a generous of olive oil drizzled on top then add a good amount of parmesean cheese and place in the oven! I bake it at 375degrees for about 45-60 minutes. I love this served over brown rice! It's whatever you like! That's the fun of this dish, pretty and easy!!
